Smoked Ham Linguini

Ingredients:

1 lb dried linguini
1 lb broccoli, broken into florets
5/8 cup Italian cheese sauce *(see below)
8 oz Italian smoked ham
salt and pepper
Italian bread, to serve

Preparation:

1 - Bring a large pan of lightly salted water to a boil. Add the linguini and broccoli florets and cook for 10 minutes, until the linguini is tender, but still firm to the bite.

2 - Drain the linguini and broccoli thoroughly, set aside, and keep warm.

3 - Meanwhile, make the Italian cheese sauce. *(see below)

4 - Using a sharp knife, cut the Italian smoked ham into thin strips. Toss the linguini, broccoli, and ham into the Italian cheese sauce and gently warm through over a low heat.

5 - Transfer the pasta mixture to a warm serving dish. Sprinkle with black pepper and serve with Italian bread.

* Italian cheese sauce
For Italian cheese sauce, melt 2 tbsp butter in a pan and stir in 1/4 cup all-purpose flour. Cook, stirring, over a low heat until the roux is light in color and crumbly in texture. Stir in 1 1/4 cups hot milk. Cook, stirring, for 15 minutes until thick and smooth. Add a pinch of nutmeg, a pinch of dried thyme, 2 tbsp white wine vinegar, and season to taste. Stir in 3 tbsp heavy cream and mix. Stir in 1/2 cup grated Mozzarella cheese, 2/3 cup grated Parmesan cheese, 1 tsp English mustard, and 2 tbsp sour cream.
