Asparagi alla Milanese

Milan-Style Asparagus

This Italian dish is a dressed-up version of basic steamed asparagus. The butter, egg, and cheese add extra color and flavor. Enjoy this Italian recipe!

Asparagi alla Milanese

Ingredients:

2 cups water
2 lbs asparagus
1 egg
3 tbsp unsalted butter
1/4 cup fresh-grated Parmesan cheese

Preparation:

1 - Bring the water to a boil in a large saucepan. Break off the ends of the asparagus.

2 - Place the asparagus in the water, cover, and steam until al dente. While the asparagus is steaming, fry the egg.

3 - Remove the asparagus from the water, drain, and place on a serving platter. Place pats of the butter on top and evenly distribute the butter over the asparagus as it melts. Place the fried egg over the asparagus tips. Serve sprinkled with the cheese.

Serves 8 to 10
